Halibut and Nectarine Ceviche

This Halibut and Nectarine Ceviche is a simple yet elegant meal that is low in fat and calories but high in protein and flavor! This fresh, nutritious dish makes for a perfect appetizer or light meal. My favorite thing to serve with this is plantain chips but it also makes excellent tacos or even taco salad!

Quick tip: Diced cucumber is a tasty and refreshing addition!

Halibut and Nectarine Ceviche
Prep Time: 20-25 minutes | Serves: 2-3


1 pound sustainably raised or caught halibut, diced
¾ cup freshly squeezed lime juice
¼ cup red onion, diced
1-2 nectarines, pitted and diced
Salt and freshly ground pepper, to taste
2-3 tablespoons cilantro, chopped
½-1 jalapeño, seeded and diced
1 bell pepper, diced
2 tablespoons olive oil

Optional for serving: plantain chips, organic corn tortillas, etc.


1.) In a bowl, combine the fish and onion with the lime juice, salt and pepper and allow to sit in the fridge for 15-20 minutes, stirring every 5 minutes or so.

2.) Remove the bowl from the fridge and combine with the rest of the ingredients. Adjust the seasoning as needed and serve as you like.
