Citrus-Spinach Salad with Radish and Avocado

Spinach is a superfood you will want to be sure to eat, even if it’s not your favorite vegetable. It’s a nutrient powerhouse, containing good things for just about every part of your body! It’s high in fiber, vitamins A,C, E & K, flavonoids, magnesium and of course, calcium and iron!

Quick tip: Add a protein of your choice to make this a more filling meal.

Citrus-Spinach Salad with Radish and Avocado
Prep Time: 10-15 minutes | Serves: 2

Ingredients:

12 oz. baby spinach
1-2 oranges (or citrus of choice), peeled and sliced into ¼” rounds
1 watermelon radish, thinly sliced
Avocado, sliced (as needed)
Sunflower seeds, as needed

Dressing:
2-3 tablespoons olive oil
Balsamic vinegar, to taste
Salt and freshly ground pepper, to taste

 

Directions:

1.) Combine all the salad ingredients in a large bowl and drizzle with olive oil, balsamic, salt and pepper as needed before serving.
